A tandoor is a traditional clay oven. It utilizes a combination of radiant heat, hot air cooking and smoking. Breads are slapped to the inner wall of the oven whereas marinated meats and vegetables are skewered and lowered in the center. This type of cooking imparts a distinctive flavor to the meats that can’t be matched.
